
Sweet molten chocolate cake
Ingredients (6 small ramekins, 8cm x8cm x 4cm):
– 120g dark chocolate
– 40g butter
– 2 eggs (medium size)
– 40g Sugar
– 30g All-purpose flour
– Extra virgin olive oil ORIGIN
– Orange marmalade(optional)
Preheat over to 180°. Butter and lightly flour six ramekins. Tap out the excess flour. Set the ramekins on a baking sheet.
In a double boiler, over simmering water, melt the butter with the chocolate. In a meantime, in a medium bowl, mix eggs and sugar.
Whisk chocolate until smooth. Quickly fold it into the egg mixture along with the flour. Spoon the butter into the prepared ramekins and bake for 5-6 minutes with fan forced, or about 10 minutes without fan. Usually the side of the cakes are firm but the centres are soft. Let the cake cool for a minute and take it off carefully from ramekins while they are still hot. Serve with olive oil and if you have sweet tooth, try adding orange marmalade or vanilla ice cream.
*Even if the cakes are over cooked, they are still wonderful chocolate cakes!
