IL NOVELLO

When the autumn leaves turn into red and gold, olive harvest begins in Italy. The very first harvest of the season is called “novello (new olive oil)” In Puglia, everyone waits for this very day for the whole year, to enjoy new olive oil and new season with loved ones. We have created this special olive oil for everyone to enjoy this wonderful experience with us.

HARVEST

When you start to feel humidity at night and cold air takes over the warm sunlight, that is the exact time we start to harvest. For our novello, we have selected green olives and hand-picked carefully so that the fruits don’t get damaged. This is our little secret of novello.

Oil

After the harvest, we started to process right away at frantoio (olive oil mills). Our olive is washed, cold-pressed and filtered.<br /> The key to make the high quality olive oil is speed. Within 5 hours after the harvest started, our novello is ready to taste and bottled.

FOOD PAIRING

From legumes to vegetable, from minestrone soup to miso soup, you can enjoy with various dishes with our novello. It also goes perfect with beef steak and sweets with chocolates.

FLAVOUR

We are using Native Andria cultivar, Coratina, for our novello. It reminds you of freshly cut grass and other Apulian wild herbs such as chicory. On the palate, it gives you a harmony between ruccola-like peppery afternote and bitterness in harmony.
