Torre Grande “Le Petrulle” Organic Extra Virgin Olive Oil has elegant medium fruity flavour and taste. It’s simply the perfect olive oil to enjoy Coratina variety and Apuliuan flavour for the first-timer.
When our grandmother was a child, Torre Grande, currently our home and farm, was also a sheepfold. Torre Grande means literally “big tower” in Italian but it also means big sheepfold.
She used to come here with her parents and remembered this place as “Petrulle”. Why Petrulle? Petrulle means many small pebbles. Since this fold of sheep kept moving the soil, these small pebbles came out to its surface, and hence the name “Le Petrulle”.
We take a great care of the soil and olive trees with the best possible natural ways. Before speaking about the quality of olive oil, the most important thing is the soil.
We start harvesting at the end of October. When the harvest gets closer, we start to select trees and olives one by one to see the condition of olives. On the harvest day, we hand-pick carefully so the fruits don’t get damaged and it doesn’t affect the flavour of olive oil.
We start harvesting at the dawn and within 7 hours, we extract olive oil and filter it at olive oil mills. We extract with the lowest temperature the mill can do to achieve the best quality. After the extraction, it goes through filters right after. Within a half day, Le Petrulle is ready to taste and bottled.
This 100% Coratina variety gives megium intensity. Strong Apulian herbs such as wild chicory and ruccola. On the palate, you can taste mild bitterness and peppery afternote.
From summer dish to winter dish, it goes perfect with four season. Using Le Petrulle on vegetable soup and legumes are magical. It gives whole new flavours. For dessert, try it on vanilla ice-cream on summer days!
When the autumn leaves turn into red and gold, olive harvest begins in Italy. The very first harvest of the season is called “novello (new olive oil)” In Puglia, everyone waits for this very day for the whole year, to enjoy new olive oil and new season with loved ones. We have created this special olive oil for everyone to enjoy this wonderful experience with us.

When you start to feel humidity at night and cold air takes over the warm sunlight, that is the exact time we start to harvest. For our novello, we have selected green olives and hand-picked carefully so that the fruits don’t get damaged. This is our little secret of novello.
After the harvest, we started to process right away at frantoio (olive oil mills). Our olive is washed, cold-pressed and filtered.
The key to make the high quality olive oil is speed. Within 5 hours after the harvest started, our novello is ready to taste and bottled.
